Sunday Morning Sandwich with Avocado Fries and a Smoked Aioli

For this recipe, get started with the smoked aioli since it needs to be chilled for 30 minutes. I recommend getting your arugula salad ready next and then the avocado fries. Then on to the main event! Enjoy! – Heather Artripe, Outreach Coordinator at Ozark Natural Foods

Ingredients

  • Apple Blossom Everything Sourdough
  • 2-3 pieces fire roasted ham
  • Julie’s Pimento Cheese (made in house from scratch at Ozark Natural Foods)
  • ½ C + 2 T Colby Jack cheese, shredded
  • Just Mayo
  • 1-2 T unsalted butter
  • 1 egg
  • Fresh cracked black pepper
  • Smoked Maple Arugula Salad (recipe below)
  • Avocado Fries (recipe below)
  • Smoked Aioli (recipe below)

Directions

  1. Cut the Sourdough bread into slices that are about ¾ “thick.
  2. Spread mayo on both sides of the bread.
  3. Assemble the sandwich with pimento cheese and ham on one piece of bread and your Colby Jack cheese and the other piece of ham on the other piece of bread.
  4. Add your butter to a skillet, once hot, add your sandwich. Cook for 3-4 minutes on one side, pressing down with your spatula. Flip and cook for another 3-4 minutes, or until your sandwich reaches the color you desire.
  5. Turn on the broiler in your oven.
  6. Place your sandwich on a baking sheet and top with the additional 2 T of shredded cheese and set aside.
  7. In the same skillet, add your egg and cook to your desired doneness.
  8. Remove and place on a paper towel. Season with salt and pepper.
  9. Place your sandwich under the broiler and broil for 1-2 minutes or until the cheese has melted.
  10. Remove and place your egg on top.
  11. Top with Smoked Maple Arugula Salad.

Smoked Maple Arugula Salad

Ingredients

  • 1 T olive oil
  • 1-2 T maple syrup
  • ¼ t smoked paprika
  • Splash of lemon juice or juice from pickled jalapenos
  • 2 C arugula
  • Salt and pepper, to taste

Directions

  1. Mix together your olive oil, maple syrup, smoked paprika, salt and pepper. Taste and adjust if needed.
  2. Toss your arugula with dressing, set aside until needed.

Smoked Aioli

Ingredients

  • ¼ C Just Mayo
  • ½ T fresh lemon juice
  • 1 T olive oil
  • 1 t smoked paprika
  • ¼ t garlic powder
  • ¼ t salt
  • Dash chili powder
  • Fresh cracked black pepper, to taste

Directions

Mix everything together and let stand in the refrigerator for 30 minutes for the flavors to blend.

Avocado Fries

  • Ingredients
  • *2 large avocados, sliced
  • Juice of ½ lemon
  • ¼ C All Purpose Flour
  • *1 C panko bread crumbs
  • ½ T garlic powder
  • 1 egg, beaten
  • Dash of hot sauce
  • Dash of chili powder and smoked paprika
  • Salt and pepper, to taste

Directions

  1. Preheat oven to 400 degrees.
  2. Line a baking sheet with parchment paper, spray lightly with cooking spray.
  3. Squeeze fresh lemon juice over avocado slices so they don’t turn brown.
  4. Season with garlic powder, chili powder, smoked paprika, salt and fresh cracked pepper.
  5. In one bowl add your flour salt and pepper.
  6. In another bowl add your egg, hot sauce, salt, and pepper.
  7. In the last bowl, add your bread crumbs, salt, and pepper.
  8. Dredge your avocado slices in the flour, then egg, and finally the bread crumbs.
  9. Lay on the parchment lined baking sheet and drizzle with olive oil or cooking spray.
  10. Bake for 15 minutes, flip and bake for 7-8 more minutes.
  11. Serve with the Smoked Aioli

*When selecting avocados make sure you get very firm ones so they hold their shape better.

* Use Panko bread crumbs for this since they are larger pieces.
